The ingredients needed to make Sweet Potato Hash:
  1. Get 1/3 cup ground beef
  2. Get 1 small onion finely chopped
  3. Make ready 1 1/2 cup sweet potato peeled& diced into small cubes
  4. Get 1/4 cup corn (regular or sweet corn)
  5. Prepare 2 medium sized bell peppers (green and red) diced
  6. Make ready 1/4 cup carrots diced into small cubes
  7. Get Salt to taste
  8. Make ready 1 pinch rosemary
  9. Get 1/2 tbsp red chilli flakes
  10. Get 1/2 tsp Black pepper divided
  11. Get 2 tbsp olive oil +more for beef
Steps to make Sweet Potato Hash:
  1. Drizzle a little oil into a non stick pan and add the beef, stir until it's losend then season with salt and ΒΌ tsp of black pepper. Keep stirring until the beef is cooked then transfer to a plate and set aside.
  2. In the same pan, heat up the olive oil, then add the onions, stir for a little while to build up flavor then add the potatoes, keep stirring.
  3. Add the carrots, bell peppers and corn, stir.
  4. Keep stirring on meduim heat till the potatoes and the rest of the veggies begin to cook and become tender. (Takes about 10-15mins)
  5. Add the beef back into the pan and then season with salt & remaining ΒΌ tsp black pepper. Add the Rosemary and chilli flakes now too, stir. Add a little bit of oil, if necessary and stir for 3-5mins more.
  6. Remove from heat and serve with fried egg.
