The ingredients needed to make Sweet & Savoury Fajita Quorn:
- Take 200 g Quorn pieces,
- Take 100 g carrots, cut into thin circles,
- Get 1/2 yellow or red bell pepper, sliced,
- Get 1/2 onion, sliced,
- Make ready 100 g Mushrooms, sliced,
- Make ready 1 tbsp tomato pureé paste,
- Get A few drops Worcester sauce,
- Get 1/2 tsp garlic granules, or 1 clove, minced,
- Get 2 tsp fajita seasoning,
- Take Salt and pepper to season,
- Make ready 1 tsp Mexican herb mix (optional),
- Prepare 1 small pinch red chilli flakes to garnish
- Get 200 ml water,
- Take 1 tbsp coconut oil for frying, or any neutral oil
Steps to make Sweet & Savoury Fajita Quorn:
- Heat up a large wok or frying pan over a medium heat and add in the oil. Once hot add in the onions and fry for 2 minutes, then add the carrots, peppers and mushrooms. Season with salt and pepper and fry gently for around 3-4 minutes stirring occasionally.
- Add the fajita seasoning, garlic and Mexican herb blend along with the Quorn pieces. Add in the tomato paste. Stir to coat the ingredients then fry until the Quorn has softened a little.
- Pour in the water and bring to a simmer. Add in a few drops of Worcester sauce. Begin to reduce down, stirring occasionally until thickened and there's just enough sauce to coat everything. Remove from the heat and serve up, sprinkle over a few red chili flakes to desired taste. Enjoy! :)
